Cinta Senese DOP: History and Key Characteristics of a Beloved Tuscan Product

A journey through Tuscan tradition and a book that speaks to young people

The Cinta Senese DOP is one of Tuscany’s most iconic culinary treasures, an ancient pig breed that embodies biodiversity, agricultural tradition, and local culture. Raised in the wild among hills and woods, it is now a symbol of Tuscan food and wine tourism.

What is Cinta Senese PDO

Cinta Senese PDO is one of the oldest native pig breeds in Europe, originating in the Siena area and now raised primarily in Tuscany, between Siena, Grosseto, Pisa, Pistoia, and Florence.

It is recognized by its dark coat with a characteristic white band, drooping ears, outdoor or semi-wild rearing, and slow, natural growth. Its production system is closely tied to the local area: the animals grow slowly, feeding naturally in pastures and wooded areas, following rhythms that respect the environment and biodiversity.

A breed saved from extinction

In the 1970s, the Cinta Senese had nearly disappeared, with only a handful of animals remaining. Its recovery was made possible by local farmers who reintroduced it to the woods of the Montagnola Senese. Today it is protected by the Consorzio di Tutela della Cinta Senese DOP, which guarantees full traceability of the supply chain, compliance with the DOP regulations, breeding exclusively in Tuscany, and limited, controlled production. The DOP designation, obtained in 2012, certifies a sustainable breeding model deeply rooted in the Tuscan landscape.

The Cinta Senese DOP is prized for its high-quality meat: deep red color, natural marbling, aromatic and tender fat, and a firm, flavorful texture. A product that directly reflects the free-range and natural rearing methods.

The book Tobia and the Cinta Senese – The Secret of the White Band

The story of the Cinta Senese reaches even the youngest readers with the book Tobia and the Cinta Senese – The Secret of the White Band, a project promoted by the Consortium and written by Emanuele Biotti. The story follows Tobia, a modern-day child who travels back in time to medieval Florence, where the Cinta Senese is already depicted in Ambrogio Lorenzetti’s 1338 fresco The Good Government.

Through its narrative, the book addresses themes such as biodiversity and the protection of native breeds, the relationship between food and the land, food sustainability, and the cultural value of agricultural tradition. An educational project designed to introduce new generations to food culture and the rural history of Tuscany.
