A land to enjoy: the best restaurants in Versilia

Open your eyes, let your palate be tickled, let your taste buds decide: Versilia at table is a wealth of sea and land flavors that are combined and blended in a delicious gastronomic synthesis.
Our gourmet itinerary revolves around names of historic and new restaurants, some of which are awarded Michelin stars, between Forte dei Marmi and Pietrasanta, for a stay under the banner of good taste. Ready for the mouth-watering experience? The number one destination for the most passionate gourmets is the restaurant La Magnolia at the Hotel Byron (1) (Viale A. Morin, 46): the name of the Michelin starred chef, Cristoforo Trapani, is a guarantee at the hob thanks to his clever creative re-creation of local ingredients. The setting is exclusive, right by the pool, even when the weather is capricious, thanks to the new outside roof. On the Summer 2017 menu, there are new dishes, such as the Gragnano linguine with fried squid and smoked Provola cheese, that bring a touch of Parthenopean culinary tradition to the shores of the Forte, paying tribute to the chef’s roots. The Bistrot (2) (Viale della Repubblica, 14) also boasts a precious star. Seven days a week, it delights its guests in a setting that is between chic and informal. Two wood-fired ovens and an open kitchen to serve Versilian cuisine on a cool summer terrace, all seasoned with the notes of live music. We’re staying at Forte dei Marmi: in the central Via Carducci, at number 61, we come across another name that needs no introduction: for thirty years Lorenzo (3) has been an obligatory stop for gourmet enthusiasts with its original recipes, such as the garlic cuttlefish au gratin, to get the appetizers going, while the second course features kingfish with candied endive, Campari mayonnaise and nettle sauce.
Those who want the sea served directly at the table should go to the address of the restaurant L’Orsa Maggiore (4) (Viale Achille Franceschi, 29), the only one overlooking the beach of the Forte: a creative cuisine without ever looking away from tradition, going far beyond the classic mixed fried seafood and spaghetti with shellfish.
Are you longing for raw fish? The right place to go is the restaurant Maitò (5), a delicious spot on the seafront (Viale della Repubblica, 9) which over the years has maintained its typically Versilia style, combining fish and meat recipes, delicious pizzas and foccacce cooked in a wood oven.
Kissed by sun and blessed with good food, the other Versilia pearl: if you want to enjoy the fresh fish experience at Marina di Pietrasanta, stop by Franco Mare (6) (Via Lungomare, 41), maybe for a romantic dinner by the pool inside the establishment of the same name. The restaurant run by the Stefanini family is the realm of zero-mile cuisine: the products come from the family garden, the fish from the owner’s boat. Moving on to Pietrasanta, note the address of the Enoteca Marcucci (7) (Via Garibaldi, 40): here the cuisine exalts mainly land recipes with a new entry on the 2017 summer menu, cacio cheese and pepper tagliolini. A large cellar with three thousand wines on the list make it a guaranteed spot for wine enthusiasts.
Do you want to try a venue with no menu? At the end of 2016 the owner of the ‘old’ Da Filippo restaurant opened a restaurant in the old town: the cuisine of Filippo Pietrasanta (8) (Via Padre Eugenio Barsanti, 45) is contemporary, and there is no menu.
Or rather, it’s composed after Filippo has created it together with the customer, according to his taste.
About five ingredients are chosen, around which the whole menu is created. Let’s leave behind the scent of the sea. At the foot of the Apuane mountains, the trattoria Il Pozzo di Bugia (9) in Querceta di Seravezza (Via Federigi, 544) run by Gaio Giannelli, has the atmosphere of country festivals, and home-made pasta and the most organic meat are its triumphs.
