Easter cake

A tasty recipe source Liguria

Among all the recipes Easter, that of Easter cake is certainly one of the most cooked. Simple to prepare, making it perfect for the Easter Monday picnic!


INGREDIENTS
SERVES 4

350 g of puff pastry
500 g of spinach
250 g ricotta
100 g of grated parmesan
6 eggs
1 egg yolk

Peel and wash the spinach and boil in salted water. Drain thoroughly and chop finely with a knife.

In a bowl gathered spinach, ricotta cheese, two eggs, Parmesan cheese, a pinch of salt and freshly ground pepper. Boil the remaining eggs making them cook for about 8 minutes, then peel them and keep aside.

Taken a little puff pastry and keep it aside for decoration; roll out the remaining two discs and the first line a springform pan lined with parchment paper.

Cake stuffed with spinach mixture and cheese; practiced in filling four dimples and arrange the boiled eggs. Cover with the second disc of dough and seal the edges well.

Roll out the pastry and cut preserved, at will, you will place the decorative patterns on the surface of the cake.

Brush with the egg yolk lightly beaten with a little water and put into the oven at 190 ° C for 45 minutes. Serve the cake pasqualina on a platter, still warm.
