The first player in the Mediterranean diet, recognized in 2010 as an Intangible Cultural Heritage of Humanity by UNESCO, extra virgin olive oil is rich in quality and has many facets, the fruit of the 538 cultivars surveyed in Italy and the increasing expertise with which they are used.

Every year, coinciding with the explosion of autumn colours, the rite of olive grazing begins, in the oil mills as soon as they reopen the intoxicating scent of the first pressing is spread, and it is finally possible to see how favourable the climate has been up to that point.
