The facade of Helvetia & Bristol
May 3, 2021

Helvetia & Bristol has reopened with many new features, including the opening of the Cibrèo Caffè

A new Florentine Renaissance in the world of food and wine and hospitality

Following the extraordinary expansion with 25 new rooms and suites by designer Anouska Hempel, who has just recently received the prestigious Luxury Lifestyle Award in the Hotel Interior Design category, the Helvetia & Bristol is now ready to welcome its guests again.
Among the unmissable novelties is the inauguration of Cibrèo Caffè. An exclusive collaboration with an icon of Italian food and wine, led by Giulio Picchi, which aims to enrich and further strengthen the local identity of the Helvetia & Bristol and to become the new "living room" of the historic centre of Florence.

A happy union between two historical Florentine realities and Italian entrepreneurial excellences with a 40-year success story.
This is an exciting project that I strongly supported and which unites two Florentine stories that share a far-sighted entrepreneurial vision, a strong sense of belonging to the city and an approach that I would define as authentic and "artisan"," said Elisabetta Fabri, President and CEO of Starhotels. "The Cibrèo Caffè at Helvetia& Bristol will become a new Florentine "living room", welcoming and convivial, where you can spend different moments of the day accompanied by Cibrèo's authentic cuisine, which is appreciated internationally.
Cibrèo, opened by Fabio Picchi in the Sant'Ambrogio district of Florence in 1979, is now known worldwide and esteemed by many internationally.

Cibrèo's philosophy is to hand down over time the authentic aromas and flavours of the Florentine and Tuscan family tradition, as well as the best products that the Italian territory has to offer, with dishes that follow the natural rhythm of the seasons, using local, eco-sustainable ingredients.
The interior spaces of the Cibrèo Caffè and the Dehors, with enchanting views of the historic facades of Palazzo Strozzi, reflect the warmth and authenticity of the Florentine welcome in an unmistakable atmosphere.

After working side by side for years with Fabio Picchi, Oscar Severini is now responsible for defining and implementing Cibrèo's culinary offerings. Among the iconic dishes he has decided to present at Cibrèo Caffè at Helvetia & Bristol are: the 'Patè del Cibrèo', the 'Tagliolini Cacio e Burro' and the 'Braciola taglio bistecca, frollata 40 giorni'.
"I am certain that the union between these two realities, strong in sharing and practicing the art of hospitality for more than 40 years, will mark the beginning of a new adventure that promises to be unique and exciting for Florence, Italy and the rest of the world." Giulio Picchi, Co-owner Cibrèo Firenze .
